Almond Chicken Balls - Bolinhas De Frango E Amendoas

Ingredients:
7 ounces cream cheese
4 ounces cooked chicken diced into tiny pieces
3 ounces chopped almonds
2 tbsp mayonnaise
Desicated coconut
Salt and pepper to taste

Directions:
1• Mix together the cream cheese, chicken, almonds and mayonnaise
2• Add salt and pepper and if you like an extra punch some curry powder or Brazilian chilly powder.
3• Put in refrigerator for about 1 hour
4• Roll into bite size balls
5• Roll through the desicated coconut.
Serves as appetizer for 4 people.

Pork chops with pineapples - Costelata De Porco Com Abacaxi

Ingredients:
4 pork chops
1 tablespoon of oil
2 ounces butter
1 pineapple
juice of 1 lime (or lemon)
1 tablespoon of cornflour
1 teaspoon of Worcestershire Sauce
Watercress to garnish
Salt
Freshly ground black pepper
1/2 cup of water

Directions:
1• Clean the pineapple and cut into slices, put 4 slices aside.
2• Prepare the chops. Clean and dry them and put salt and pepper on them.
3• Put the oil and the butter into a frying pan, when brown add the chops and fry for about 20 minutes.
4• When done arrange them on a hot serving dish and put aside.
5• Fry the 4 slices of pineapple in the same fat as the chops, about one (1) minute on each side
6• Arrange 1 slice on each of the chops
7• Put the rest of the pineapple in a blender and blend.
8• Mix the blended pineapple with the lime (or lemon), the cornflour, the Worcestershire Sauce, salt and pepper
9• Add this mixture to the fat.
10• Add a little water and bring to the boil and pour over the chops
11• Garnish with watercress
Serve with white rice

Serves 2.
